Write to the publishers or better still, get them on the phone--all this info is in the book itself-- you'd be shocked how easily they can give you --most times--the info on the photo shoot of the book cover, including photographer and usualy thru him, the stylist who came up with the clothing. It would help immensely if you tell them you're doing a school project on how to publish and promote a book. I used to work as a designer in the ad & promo dept. of John Wiley & Sons, Inc., book publishers. As a rule, publishers nowadays keep all the info involved in the creation and promotion of a book in a computer file, so everything is very easy to retrieve, unless the publisher doesn't want to disclose any info.
