These are portobella mushrooms. If you leave the black gills in, they will leak black on your bun or plate. You can scrape the gills out before cooking with a spoon and it won't "bleed" black juice.

I hope you didn't pick them in the woods. That would be a mistake. Go to the grocery store and look at what they sell.
